Science Resource Description
It is important to understand the relationship between the chemical structure
of a fatty acid molecule and its functionality, termed structure--function
relationship. This structure--function relationship concept is illustrated by
exploring the effect of carbon--carbon double bonds on the physical state
of lipids at room temperature. Students will be able to explain the relationship between the chemical structure of a fatty acid and its melting temperature and state at room temperature, solid (fat), or liquid (oil).
